Virgin oil of medium fruitiness, very well balanced on the palate; sweetness stands out, but also slight hot and bitter notes are noticeable, which are the sign of presence of polyphenols (natural anti-aging agents inherent to the olive fruit).

This is a variety , sensitive to low temperatures, with a productive potential which is higher than any other adaptable variety when planted in high density plantations. Its ripening is about 20 to 30 days slower than that of the Arbequina, what makes it the ideal complementary variety for big properties when it comes to optimize the use of the harvesting machinery and the mill.
